Vegan Greek Salad with Roasted Chilli & Lime Chickpeas Recipe
Prep: 10 mins Difficulty: Easy
Ingredients:
- 1 green pepper
- 1 red onion
- 5 medium juicy tomatoes
- ½ cucumber
- Handful of Greek pitted kalamata olives
- Pinch of salt
- ½ tbsp dried oregano
- 2 tbsp of olive oil
- Block of Vegan Feta (We use the brand - Violife)
- Nudie Snacks Roasted Chilli & Lime Chickpeas
Method:
- Grab yourself a serving bowl
- Begin by coring your pepper and proceed to slice the pepper into rings
- Next slice up the tomatoes and onions roughly making sure the vegetables are in big chunks
- *Optional* peel or don’t peel the cucumber depending on whether you like the skin. Then slice the cucumber again in big chunks.
- Toss in your kalamata olives along with the oregano, salt, olive oil.
- To finish place your feta block on top of your salad and toss over your roasted chilli and lime chickpeas!
*Option to add more garnish depending on preference*
