Baked Cauliflower Katsu Bites

Ingredients

Spice Mix:

Fry Light Oil for cooking

Optional: To make your cauliflower extra crispy add breadcrumbs and egg substitute

Method

  1. Preheat the oven to 180Cº / 350Fº.
  2. Cut the cauliflower head into florets. In a big bowl, mix the cauliflower florets with flour, curry powder, turmeric and a pinch of salt & pepper and set aside.
  3. (OPTION TO SKIP THIS STEP) Toss your now spiced cauliflower florets into a bowl of your egg mixture and coat them. Next place the cauliflower into your breadcrumb dish and coat again.
  4. Cooking time! Line a baking tray/dish with foil and pour your cauliflower bites onto the tray. Spray with fry light oil and cook in oven for 40 minutes. Flip the cauliflower halfway to ensure the cauliflower is cooked on each side.
  5. In the meantime prepare your katsu curry sauce. Dice an onion and lightly fry on a low heat until translucent. Add your garlic and ginger. Stir and cook for about 5 minutes.
  6. Tip in your coconut milk and vegetable stock cube. Slowly simmer until stock cube is dissolved for about 10-15 minutes.
  7. Next add your soy sauce and honey.
  8. To thicken your sauce add one tbsp of corn flour and stir your mixture. Allow sauce to simmer before adding more cornflour allowing the mixture to thicken. Continue to add a tbsp or more until your sauce is to your liking of thickness. Remove sauce from heat to stand for a minute.
  9. Place your cooked cauliflower into a serving dish and pour over your katsu curry sauce and enjoy!
